As a busy Mom of 3 boys crock pot meals are a life saver. I’m still not great at getting up before the morning chaos to get it started through the weekdays…but I managed to throw it together this weekend. We only had to run to the store for limes but everything else we had on hand. Thankful we can throw on our boots and live 2 minutes from our local Summer Fresh!
1 lb. Chicken breast (By the way- did you know it is not advised to rinse your chicken before cooking?! This is to prevent splattering where bacteria leading to illness could be easily spread…cooking it kills the bacteria not washing it)
1 Pkg Taco Seasoning – (you can also make your own by using chili powder, garlic powder, onion, red pepper flakes, paprika, dried oregano, cumin and salt.)
1 jar Clearly Organic Salsa, 16 oz.
Juice of 2 limes – (I had my 7-year-old take a pic of my “kitchen hack.” Juicing limes using the handles of a can opener. You can use a garlic press too, this makes it so much easier than doing it with your hands.)
1 bunch of cilantro- This I planted a couple weeks ago and clipped from the garden- Yay!
Place Chicken in crock pot, sprinkle in taco seasoning, salsa and chopped cilantro. Cook on low for 6 hours or on high for 4. Remove Chicken and shred with fork and spoon liquid mixture over to keep moist. We squeezed some lime juice in at this step too.
After that it’s just some chopping for your toppings! My boys are picky of course, but they all ate this so that’s why it gets a thumb’s up in my book!
