If you’ve even briefly glanced through this blog, you know a couple of things.
1. I get really excited about food.
2. I love snacking.
Among all of my snack recipes this is likely the one I frequent the most!
It is the perfect blend of salty, savory, and sweet.
Also did I mention these are vegan and free of gluten, peanuts, dairy, & soy!
In all of my years of making these beauties, I have shared them with hundreds of people and not one person has ever disliked them (children and husbands included). The ingredients are so simple and provide the perfect naturally sweet flavor. Between the sesame seeds, almond butter, and raw cashews, this recipe packs a powerful punch of healthy fats as well.
That being said, these bites are pretty dense…what does that mean?
- You can grab 1 bite and it will keep you full for a while. How convenient!
- You can’t eat 10 in 1 sitting…well you could, but you’d be consuming around 1000 calories!

Apricot Sesame Bites
1 c raw cashews
1 1/4c pitted dates (about 15-16 depending on size)
5 dried apricots
1 Tbsp almond butter
1/4 c sesame seeds
1/4-1/2 tsp cinnamon
Combine cashews and dates in a food processor, pulse until they are finely chopped and mixture barely begins to stick together. Add apricots, almond butter, sesame seeds, and cinnamon. Process until mixture begins to form a ball. Test the texture by pressing mixture together, it should form a ball easily. Form into desired size balls and store in the fridge.
