It’s June! Blueberries are covering the grocery stores and they are oh-so-delicious!
With just 85 calories per cup, they make the perfect snack. They are also relatively high in fiber which helps keep you full and focused for the day! There is much research being done on the health benefits of blueberries…here’s a little taste…
  • Blueberries may decrease heart disease risk
  • Blueberries may promote brain health and delay decline associated with aging
  • Blueberries may decrease blood sugar levels and improve insulin sensitivity over time
Now that we know how great they are for us, let’s eat ’em! Many of my clients can’t see beyond blueberry muffins but there is a bright big world of blueberry recipes that are arguably more delicious than muffins! Including this gem…and just in time for back porch sitting.
4-ingredient Blueberry Frozen Yogurt

3 Tbsp honey

1 Tbsp lemon juice

½ c plain yogurt

16 oz frozen blueberries

Place all ingredients in a food processor. Process until creamy, continually scraping down the sides. Blend until smooth, or around 5 minutes. Serve immediately or store in freezer.
