Pulses boast many health benefits plus there are various food puns that can be said…I’ll refrain. Between the various types of beans, peas, and lentils, pulses are ideal for all recipes from appetizers to dessert. They are a great protein source for vegetarians, an affordable option for budget-minded individuals, and sustainable! Pulses are drought-tolerant, can survive frost, and have a low carbon footprint!
Form the 1/2 cup habit! Adding just 1/2 cup 3x/week may improve many aspects of health due to the fiber and protein content of these might beans, peas, and lentils.

In partnership with my husband (who was a chef in another life) we constructed this delicious Chili recipe with a twist. If you don’t have an Instant Pot you can certainly make this on the stove or in a slow cooker. But somehow using the Instant Pot makes one feel like a boss!
The recipe calls for dry beans, this is the most cost effective way to enjoy pulses! Don’t be intimidated, they are so easy to work with! First, pour beans onto a sheet and pull out any shriveled pieces.
Next, add beans to a large bowl and cover with cold water, about 2-3 inches above beans. Let sit overnight on the counter or in the refrigerator.
[*Pro Tip: Soaking beans may make them easier to digest plus it decreases the cook time.]
When you wake up the next morning they should have about doubled in size. This could be a fun experiment for your kiddos too!
